Ingredient Ideology | Culinary Applications Of Dill Leaves By: Dr. Kaviraj Khialani- Celebrity Master Chef.

Dill leaves a popular sharp and pungent green from the herb family is well known to us. It is one of those interesting ingredients available all year round and can be easily incorporated into our meal plans and variety of dishes though we are a little picky and choosy about using it very often.

It is one of those fresh herb which has well placed itself in variety of courses and category of dishes in various international cuisines. My experience with dill has been wonderful and it’s great to add it into lentils, a dough for a paratha or even a pasta for that matter, I also tried gnocchi with potato and semolina once with a touch of dill in it and it was just wonderful to go along a nice saffron cream sauce and wild mushrooms!

Dill leaves also called as sua bhaji or shepu in our local markets are best to use fresh, some of us also dry and store it for a later use depending on recipes. It’s always good to refresh it under running water and place it in chilled water for a few mins and then use it. This multi-tasking flavor bunch as I usually address it as has a lot to offer us nutritionally as well.

Health Benefits of Dill Leaves:

  • Dill leaves are a good source of manganese, iron and magnesium.

  • They are also regarded good source of calcium & are good for bone health.

  • It is good for the kidneys and spleen, prevents infectious diarrahea.

  • Dill is known to be helping activate bile and digestive secretions.

  • It is also considered to be a good immunity boosting ingredient.

  • It has calming properties and also helps in insomnia.

  • Dill leaves help manage diabetes and also prevents excessive gas.

  • It is helpful in free radical protection, to stop hiccups,

And is also an anti-bacterial rich ingredient.

Here are a Few Culinary Uses of Dill Leaves:

  • Dill has been in our Indian kitchens in numerous ways and in all seasons, I remember mix dal vadas with dill during monsoon with a curry leaf chutney and a piping hot cuppa filter coffee.

  • Dill goes well with dals and lentils in daily cooking as well, yellow moong dal tadka with a handful of dill is just too good.

  • I also enjoy dill with cucumber, mint, garlic and greek yogurt in the form of a summer salad, a chilled dip format to go with crackers works well too!

  • Dill in parathas either in the dough or in the stuffing with boiled mashed sweet potatoes, green chili and a dash of roasted crushed jeera is great with a bowl of curd.

  • Seafood has been well associated with dill leaves and a lot of continental, far-east and even American and English recipes use dill with Salmon, Bassa and other varieties including butter garlic prawns with dill is yum!

  • Dill aur soy ka dum pulao, try this one with brown rice with a tempering of Bayleaf, peppercorns and green chilies this pulao is a sure hit with boondi ka raita!

  • Salad dressings with mayonnaise also prefer dill with seafood elements attached for instance the tuna dill potato salad is very popular with mayo and splash of lime into it.

  • Getting dill into baking some of my all-time favorites remain the roasted garlic and dill bread rolls, sun-dried tomato and dill baguettes, dill and olive croissants with cream cheese, dill and peri - peri spice tomato bread.

This Chennai app wins the ‘Best Food Delivery App of the Year’ award

Bhookle, a pioneering platform connecting home chefs with food lovers, has been honoured with the Best Food Delivery App of the Year award at the Food Connoisseurs India Awards 2024. This prestigious accolade, judged by 16 veterans of the food and beverage industry, recognises Bhookle’s unique approach to delivering authentic, homemade meals with a personal touch.

This award holds special significance for Bhookle, a young startup based in Chennai. Competing against eight national players in the food delivery industry, Bhookle stood out for its innovation, social impact, and focus on promoting home-cooked meals. With a mission to empower home chefs and connect them to a wider audience, Bhookle has redefined the food delivery landscape, creating a community-centric platform where food is more than just a menu item—it’s a story.

“This award reaffirms that what we’re doing at Bhookle is truly unique,” said Arvind Ravichandran, Co-Founder of Bhookle. “Despite being limited to Chennai while our competitors operate nationwide, this recognition shows that our concept is welcome pan-India. We are thrilled that industry veterans and customers alike believe in our vision to revolutionise the food industry.”

What sets Bhookle apart from other food delivery platforms is its human-first approach. Unlike traditional apps that focus on standard menu items, Bhookle offers customers the chance to discover homemade meals with a personal story. For instance, instead of ordering ‘sambar’, Bhookle users can order ‘Vidhya Aunty’s Special Arachivitta Sambar’. This approach adds a layer of love, memory, and authenticity to every meal, creating a dining experience that goes beyond convenience.

Bhookle caters to a largely unstructured segment of the food industry: home-cooked meals. Through its intuitive platform, it bridges the gap between home chefs and customers craving something unique, healthy, and nostalgic. The app emphasises quality and safety, with each home chef vetted for FSSAI compliance and kitchen hygiene.

The award is not just a win for Bhookle but also for the home chefs who power the platform. Upon receiving the award, Bhookle dedicated the recognition to its chefs, crediting them for the platform’s success.

“Our chefs are the real stars,” Arvind added. “Their talent and passion drive Bhookle, and this award belongs to them.”

This recognition has fuelled discussions around Bhookle’s potential to become a unicorn—a startup valued at over a billion dollars. With increasing interest from top chefs, a 2X surge in app downloads, and significant investor enquiries post-award, Bhookle is poised for rapid expansion. The platform is actively exploring partnerships and gearing up to scale beyond Chennai, with plans to launch in Bengaluru by 2024 and expand to three more tier-one cities by 2025.

Bhookle features inspiring stories like that of Chef Sujatha Sriram, who uses her earnings to feed stray dogs, and Chef Sangeetha, a single mother who supports her children’s education through her income on Bhookle. These success stories highlight the platform’s commitment to making a positive impact on local economies and fostering financial independence for home chefs.

“This award is not just a recognition of our past achievements but a validation of our future potential,” said Arvind. “We are committed to scaling Bhookle across India while maintaining the quality and soul of our platform.”

Bhookle’s team believes that this award is a proud moment for the city of Chennai.

“This is a Namma Chennai app,” Arvind said. “It’s a platform born here, and it’s a platform that we hope the people of Chennai will continue to support and love as we grow.”

To celebrate the award, Bhookle is planning an event later this quarter to recognise its chefs and share the award with them. The team is also working on enhancing its services and onboarding more home chefs from different cities across India.

Indian Snacking Reimagined: Discovering Emerging Trends and Consumer Preference

As they say, there are those who live to eat and those who eat to live. Irrespective of this, for us Indians, snacking has been an activity that culminates in satiating both body and mind. On top of that, with India being the land of rich culinary heritage, the Indian snack industry has undergone several significant modifications over the years to adapt to changing eating habits.

In recent times, India’s snack consumption patterns have witnessed a considerable change in terms of social, cultural, and economic dynamics. The consumers’ relationship with their snacks has become deeper and more meaningful. New trends and ways are shaping this dynamic market as customers continue to look for convenience and variety in their snacking options. Keeping this in mind, let us further explore the key trends in the market and changing consumer patterns.

New Trends Shaping the Indian Snacks Market

The Indian snack market is critical to the country’s culinary market, encompassing diverse flavours, ingredients, and textures. According to statistics released by the IMARC Group, the delectable India snacks market size achieved INR 42,694.9 crore in 2023. Looking ahead, the market is estimated to reach INR 95,521.8 crore by 2032, showing a growth rate of 9.08% during 2024-2032. However, with the changing consumer lifestyle and urbanisation, the industry is undergoing metamorphosis. With that, the evolving snacking culture and emerging trends are poised to revamp the nuances of this savoury ecosystem.

 Increasing Demand for Premium Snacks

From artisanal baked goods to exotic chip flavours, the Indian snack market is witnessing a considerable shift. In recent times, consumers are opting for premium products. This trend has stirred the innovation for high-quality and gourmet snacks containing top-notch ingredients and premium packaging. For instance, many snacking brands have introduced their premium and gourmet range, including ice creams and well-known snack brands. Other examples include ready-to-eat gourmet meals and foreign-packaged snack items such as ramen, sushi, etc. The newfound exposure to international flavours is the catalyst responsible for this change.

Flavour Fusion

In the evolving dynamics of the Indian snack market, an interesting trend is rising: the fusion of traditional flavours with international ingredients. With this, the manufacturers are experimenting with exotic ingredients from all around the world with the hopes of turning them into a beloved local snack item. As a result, the existing market is plagued with an abundance of delightful novelty snacks. For instance, there are plenty of brands that sell snacks infused with international flavours such as salsa, American cheese, and Manchurian. Barbeque chips, Chilli Momos, Gulab Jamun cheesecake, etc, are some examples of fusion-flavoured food items available in the market.

E-commerce and Direct-to-Consumer (D2C)

The introduction of e-commerce, quick commerce, and direct-to-consumer models is revolutionising the Indian snack market environment furthermore. According to the India Brand Equity Foundation, the Gross Merchandise Value (GMV) of e-commerce has reached INR 6,000 crore, increasing at an annual growth of 22%. On the other hand, the quick commerce sector currently stands at a value of INR 3369 crore, growing at a CAGR of 24.33%. This massive boost is due to the fact that e-commerce platforms allow brands to improve their visibility and provide consumers with a smooth online shopping experience. On the contrary, D2C models offer brands an opportunity to connect with their consumers and accumulate valuable feedback.

Building a Snacking Narrative

Modern consumers look for more than just a product. They look for a story behind their food products. While keeping this in mind, the brands that display the origin of their ingredients, the artistry in their product making, and their dedication to social responsibility are captivating consumers’ attention. For example, a ketchup company has used this approach in their marketing strategy. With this, they have built a narrative of how they procure fresh tomatoes from farmers to make their products.

A Preference for Savoury Snacks

According to a recent survey conducted by Farmley, 68% of consumers prefer savoury snacks to sweet snacks, 44% seek spicy flavours such as peri-peri, and 38% have a preference for classics like black pepper. According to researchers, black pepper holds significant value in the eyes of consumers as it provides a source of warmth and has a specific nostalgic charm associated with it. It is made for the people who seek comfort and tradition in their food products.

Market Diversification

The post-pandemic era has led to changes in every possible aspect of our lives, including eating habits. With this, products such as flavoured makhane, ragi, or oats-based products, and innovative flavours of popcorns have made their indelible mark in the industry. Products such as Desi Veggie Noodles, Masala-flavoured oats, and Ragi Bites Choco sticks are currently trending in the market.

What’s Next for the Snacking Sector?

The transforming ecosystem of snacking in India depicts an interplay of evolving consumer patterns and advancements in technology. As traditional Indian snacks make room for more innovative creations, manufacturers are coming up with more personalised and regional snacking specialties to cater to diverse tastes. As a result, this revolution offers promising prospects for both customers seeking new culinary experiences and the snack industry to meet changing demands.
