1. Parinde main Parinda from Uttar Pradesh

Parinde main parinda looks like this rich extravagant dish, which weighs down the table as you keep it. Quite a lot of work goes into the preparation of this dish. It is a rendition of the bigger roast, that was basically made with whole camel, stuffed with smaller animals, one inside the other, till the smallest cavity fills with a boiled egg. It is made with duck, chicken, quail and a boiled egg. Each bird was prepared and marinated separately and differently. The flavor of each is retained while they come out beautifully in culinary nirvana.



2. Shufta Kanaguchhi from Jammu and Kashmir

Here is dish which has the exclusive and precious morel mushrooms as an ingredient. This dish is basically all dry fruits sweetened gracefully. Kashmiri Shufta is one of the few sweet dishes from Srinagar. This dish is paradise in a bowl. It is a thick concoction of cottage cheese, dry fruits, saffron, milk, desi ghee and morel mushrooms. This dish was the invasion by Timur in 15th century that left a legacy of Kashmiri cuisine.





3. Phulkari Pulao from Punjab

Move over lubricant laced hearty dishes, here’s a dish prepared from four different variety of rice. It’s called ‘Phulkari Pulao’, which is a mix of a variety of rice. This is refreshing since traditional pulao is increasingly giving way to biryani. Nice to know the hearty Punjab is varied too.



4. Jadoh a Dish from North-East India

Jadoh is a Khasi delicacy from Meghalaya, with rice as its basic ingredient. It’s got pork, rice, herbs and is richly garnished with cilantro. Served simmered and savoury! Jadoh is one of the recipes from Meghalaya which is on the verge of loss.


5. Tit-Koh from Tamil Nadu

This is a refreshing dish with freshness of coconut water, fish sauce and honey. It has the richness of pork and caramel. Garnished and sprinkled with red chillies on top.



6. Chena Poda from Odisha

Here is a creamy rich dish made of ricotta cheese, sugar and brown sugar. With the crunch of roasted cashew nuts and raisins. Sometimes, jaggery was also used to make it. Cooked hot and served cold, fresh and slightly moist.  Chena Poda originated in the town of Nayagarh in the first half of the twentieth century.



7. Kalmi Saag from West Bengal

Kalmi Saag is a leafy vegetable that is available mostly in summers. It is grown in the wetlands and this recipe has very cooling effects on the body. Very simple and basic to cook, with the only other vegetable to accompany being onion.



8. Ratalachya Gharya from Maharashtra

This one is a traditional dish of the Maharashtrian food legacy. It looks like stuffed paratha. It’s got sweet potato for stuffing and the highlight being that it’s served with spicy Mirchi cha thecha.



9. Saasni Machi from Gujarat

This dish is a conglomeration of Gujarati and Parsi Flavors. It’s basically a white, egg and rice flour-based sauce. Only white fish like pomfret is used to make this dish. It also contains some local seasonal vegetables which are hard to come by now.



10. Lehsun ki kheer from Rajasthan

Here is an exotic sweet dish with goodness of khoya, milk, dry fruits and, wait-for-it, garlic! Yes. They had a kheer made out of garlic. Absolutely sumptuous and thick, served cold and in perfection with rich desi ghee for preparation.

11. Crab Curry from Bihar

Crab recipes are just as tricky and hard to come by as they are delicious. This rich and authentic recipe was however, very simple to cook. Novel how a state that boasts of rich vegetarian dishes had a crab-based dish as its speciality once.

Here are a few recipes from my favourite list which should be revived and made popular in the menus all across for the food connoisseurs:

Recipe-1] Lehsun ki Kheer from Rajasthan

Ingredients:

20-25 garlic cloves, peeled

1 litre of milk

1/2 cup sugar (adjust to taste)

A pinch of saffron strands (soaked in a tablespoon of warm milk)

1/4 cup mixed nuts (almonds, cashews, and pistachios), chopped

1/2 teaspoon cardamom powder

Ghee (clarified butter) for frying the garlic cloves

A few strands of saffron for garnish (optional)


Method:

1.Heat a small amount of ghee in a pan and fry the peeled garlic cloves until they turn golden brown. Be careful not to burn them. Once fried, remove from the pan and set aside.

In a separate heavy-bottomed pan, bring the milk to a boil. Stir it continuously to prevent it from sticking to the bottom.

2.Once the milk comes to a boil, lower the heat and simmer it until it reduces by about one-third of its original quantity. Keep stirring occasionally to prevent the milk from scorching.

3. Add the fried garlic cloves to the simmering milk and continue to cook. Stir gently to combine them.

Add the sugar and mix well. Continue to simmer until the kheer thickens, and the garlic cloves become soft and well-incorporated into the milk. This may take about 30-40 minutes.

4.Add the saffron strands soaked in warm milk, chopped nuts, and cardamom powder. Stir well and continue to simmer for another 5-10 minutes.

5. Once the kheer has thickened to your desired consistency and the garlic cloves have become soft and flavourful, remove it from the heat.

Let the kheer cool to room temperature, and then refrigerate it for a few hours to serve it chilled.

6.Garnish with saffron strands before serving if desired.

Lehsun ki kheer is a sweet and aromatic dessert with a hint of garlic flavor, making it a unique and delightful treat. Enjoy this traditional Rajasthani dish as a special dessert after a meal.



Recipe-2] Crab Curry from Bihar

Ingredients:

500 grams of fresh crabs, cleaned and washed

2 onions, finely chopped

2 tomatoes, finely chopped

2-3 cloves of garlic, minced

1-inch piece of ginger, minced

2 green chilies, split lengthwise

1/2 cup mustard oil

1/2 teaspoon turmeric powder

1 teaspoon red chili powder (adjust to taste)

1 teaspoon cumin powder

1 teaspoon coriander powder

Salt to taste

Fresh coriander leaves for garnish

Water as needed.


method:

  1. Heat the mustard oil in a deep, heavy-bottomed pan until it starts to smoke. Remove it from the heat and let it cool slightly.

  2. Once the oil has cooled a bit, return it to the heat and add the chopped onions. Sauté the onions until they turn golden brown.

  3. Add the minced garlic and ginger and sauté for another couple of minutes until the raw smell disappears.

  4. Add the chopped tomatoes and green chilies to the pan. Cook until the tomatoes become soft and the oil starts to separate.

  5. Add the turmeric powder, red chili powder, cumin powder, and coriander powder. Cook the spices with the tomato-onion mixture for a few more minutes until the oil separates.

  6. Now, add the cleaned crabs to the pan. Stir well to coat the crabs with the spice mixture.

  7. Season with salt and cook for about 5 minutes, stirring occasionally.

  8. Add enough water to cover the crabs and bring the mixture to a boil. Reduce the heat to a simmer, cover the pan, and let the crab curry cook for about 20-25 minutes or until the crabs are cooked through and the curry thickens. Stir occasionally to prevent sticking.

  9. Check for seasoning and adjust the salt and spices if needed.

Once the crab curry is ready, garnish it with fresh coriander leaves.

Serve the Bihar-style Crab Curry hot with steamed rice or roti (Indian bread). Enjoy this flavourful and spicy crab curry, a traditional dish from Bihar, as a delightful addition to your Indian cuisine repertoire.



Recipe-3] Chenna Poda from Odisha.

Ingredients:

For Chena (Paneer):

1 litre of cow's milk

1-2 tablespoons lemon juice or vinegar

Water

For Chhena Poda:

1 cup homemade chhena (paneer)

1/2 cup sugar (adjust to taste)

1/4 cup semolina (sooji)

1/4 cup grated coconut (fresh or desiccated)

1/4 cup chopped nuts (cashews and almonds)

1/2 teaspoon cardamom powder

A pinch of salt

2 tablespoons ghee (clarified butter)

1/2 teaspoon baking powder

1/4 teaspoon baking soda


Method:

  1. Making Chhena (Paneer):

Heat the milk in a heavy-bottomed pan and bring it to a boil.

When the milk starts boiling, reduce the heat and add lemon juice or vinegar while stirring continuously. This will cause the milk to curdle and form chhena (paneer).

  1. Once the chhena has separated from the whey (the liquid part), strain it through a muslin cloth or a fine sieve. Rinse the chhena under cold water to remove any traces of lemon juice or vinegar.

  2. Squeeze out excess water from the chhena by tying it in the cloth and hanging it for about 30 minutes.

  3. Preparing Chhena Poda: Preheat your oven to 180°C (350°F).

In a mixing bowl, crumble the chhena and add sugar. Mix well and let it rest for 15-20 minutes to allow the sugar to dissolve.

  1. Add semolina (sooji), grated coconut, chopped nuts, cardamom powder, and a pinch of salt to the chhena-sugar mixture. Mix everything thoroughly.

  2. Heat ghee in a small pan and add it to the chhena mixture. Mix well. Add baking powder and baking soda to the mixture and combine it evenly.

  3. Grease a round cake pan or a baking dish with some ghee.

Pour the chhena mixture into the greased pan and spread it evenly.

Bake in the preheated oven for about 35-40 minutes or until the top turns golden brown and a toothpick inserted in the centre comes out clean.

  1. Remove the Chhena Poda from the oven and let it cool in the pan for a while. Once it has cooled slightly, gently invert it onto a plate or a serving platter.

  2. Cut into slices or squares and serve your homemade Chhena Poda as a delicious Odia dessert. Enjoy the rich, caramelized flavors of Chhena Poda, a delightful sweet treat from Odisha!

The word accidental is quite a touching one and has been through our mind and system a couple of times earlier as well. The fact of the matter is that our industry is a highly performance oriented one which calls for not just physical fitness, grooming standards, language barriers, unexpected expectations of guests, clients and more. What needs to be looked at is the passionate uncompromising attitude and a willingness to make a difference.

My own experience of 25 years now has been a real to eye witness of some people who passed ways, crossed lanes and stayed on the same platforms etc who in my opinion were a complete mis fit as a part of the hospitality & culinary operations. Looking back two and a half decades things and time was so very different and diverse.it was never easy to start anything new and being a part of a new system always has its pros and cons. Being a people’s profession here we are expected to have next levels of patience factor, understanding nature and humility with empathy towards one another.

Over the years, we have observed that people who wish to attain success and be known in this industry have somewhere been influenced by a number of things and not to forget social media. Today if you ask someone like a aspiring culinary professional, what is your aim in the next 3 years approx. in the industry the reply would be-a sous chef or a head chef with a branded property with several perks and benefits! I do not wish to anyway turn down the motivated candidate but after having a healthy discussion with my fellow colleagues, chefs and hoteliers, human resource managers etc we somehow did not feel very convinced with the reply. Though it does depend on performance, appraisals all through the way and hotel expectations etc a candidate must also realise and be a little wiser in giving replies in order to get the conversation going ahead and be able to lead to a starting point correctly matched, well valued and perfectly gauged.

Here are a few points which one must keep in mind when it comes to making a successful & promising career in the hospitality industry.

  1. BE GROUNDED IN YOUR ASPIRING AIMS: fresh aspiring to be professionals graduating from esteemed hospitality management institutions across the country should always keep in mind that achieving success is not an overnight task, it is a process which takes its own due course of time. Hence let us not try to look for short cuts and jumping the ladder up strategies. 

  2. BE REALISTIC IN WHAT YOU EXPECT: It has been observed that fresh graduates in today’s times are a little not too sure of how and where they wish to start their career. At times they get through a particular hotel and are still not satisfied with the offer letter since they heard something unpleasant from somewhere about the place etc. also do not confuse yourself with multiple offer letters to start your first job. Be wise!

  3. PEER ADVICE - NOT THE BEST ADVICE: Students today feel more comfortable in picking on advice and help from peers and they feel that that is the best way to get the replies to their confusions and queries. Experience is the key and which should not be ignored. Nothing can beat experience of a person hence make a better choice on whom to go up to and get the support.

  4. SOCIAL MEDIA SUPPORT – DOUBLE CHECK: Since I come from the classic era when we didn’t have social media etc it was a different world all together for us. We did better quality reading in studies, spending time in the libraries making notes and getting our queries resolved by our valued teachers who were everything to us in helping us shape our careers. We would not hesitate to walk up to them with a bunch of questions to get the real answers etc same way social media can be a good platform to get your replies but one should connect with experienced people as well.

  5. VOICE YOUR QUERIES IN ADVANCE: To some graduating students the real world and hotel industry seems like a new training centre, where they will go daily and sit down in a classroom and ppt shows will be presented etc. the industry on the other hand has ever since been clear that we need people who are tough, and can withstand pressure and carry out tasks effectively. This gap needs to be filled up perfectly well in order to have a smooth flow as a part of the industry. Ask questions, clarify your doubts, reach out to us and check with us with are the possibilities etc before taking the leap.

  6.  FOCUS ON THE FEASIBILITY & NOT FEAR: Students across the country have been reaching out to me over the years now and some of the most commonly put-up queries include that what is the scope for growth in the industry? What is the possibility or being stable? Are there chances that we can be asked to leave after a set tenure or so? What if I don’t get the desired results from my work place after I complete my 1 year or probation period etc. My reply to all the above has been the same which says keep your focus on your goal and not in short term visions. You need to do your best every single day at work and prove your abilities, skills & talent to the people there. If one can see that you are a good performer why would a hotel or a company want to lose an asset? 

  7. GIVE YOUR 100 PERCENT ALWAYS: easy to say this line and motivate everyone around but yes that’s how it is. One needs to be self-motivated in our industry. You cannot keep waiting for someone in the team, seniors etc be there when you want and praise you every hour, day and week. Trainers and human resource professionals too shared the same with me when it comes from the industry perspective, you have to keep some part of your personal life on the side and offer your services without hindrances and distractions in order to achieve the motto of the hotel or property from revenue generation to customer satisfaction!

  8. DO NOT TAKE CRITICISM TO HEART: Feedback and Criticism are 2 elements which should be taken on a very constructive note and for self-improvement. The very fact that we as humans are not perfect at all we need to be open to ideas, views and opinions for doing better not just at our place of work being our dharma which should create good karma but also in our personal life as well. There are good days & bad days in the lives of everyone but with a little calm, cool and composed mindset we can conquer all such negativities and turn them into positive energy and use it to the best of our capacities.

  9. CHANGE IS ALL THAT IS CONSTANT- ACCEPT IT: A simple line to write and share but ends up complicating a lot of people and their careers. It is important to self- introspect on the word Change! It is imperative, can’t be avoided, cannot be escaped from and is not worth going against. In a highly unpredictable world in which we are living today, we cannot guarantee what is going to happen the next minute or day or week hence it is for us to think practical and go with the flow at times and do not complain against the odds and evens which are not matching your horoscope or stars. We all have come up in our life accepting change as it sees the good and betterment for us. 

  10. IT IS OK NOT TO BE OK SOMETIMES: Each one of us is ultimately a human being and there are times in our life when situations and roleplays fall out in such a way that we start struggling in between the mind and the heart. Both of them have a different frequency and therefore it is not necessary that it has to be always a bingo or agree factor. There are days when we just want to pull back a little bit, take a break from our highly physically and mentally strenuous professional life, taking a break or a leave is no crime! But the fact of the matter remains about the proper timing & feasibility which would not affect the work and the organisation on the whole. Balance is the word and make sure that you don’t shift your focus from work and in the bargain the no of days not worked ratio exceeds no of days worked.


On a Concluding Note: Every industry and profession have a few pre-requisites and attributes which a candidate must possess before entering into it and it also happens at times that our mind and heart might agree on it but the real-world rejects. It is very close to the quote Man proposes- God disposes! All of us must do a proper homework- research and speak to experienced people before taking up a highly competitive, challenging & glamourous profession of which we at times only witness the front picture and not the hard work that goes behind to make it happen!

It's critical to comprehend the skills that students who seek hospitality education will acquire before I respond to your questions about why they should. As I frequently emphasize, hospitality management is a humane approach to conventional business education. And that's precisely what sets this course apart from others, along with the chances it offers.

Contrary to popular belief, a degree in hospitality provides doors for employment in nearly every field. The hospitality industry is not just about hotels and restaurants. Students are well equipped to work in industries like travel and tourism, banking & finance, real estate, consulting, luxury lifestyle & retail, event management and so many more.

In fact, a lot of students decide to go on and become successful entrepreneurs in their chosen field of interest. The unique quality of hospitality education is in its emphasis on human capital.  While on one hand the industry experts, human resource departments, hiring professionals and counsellors advice that one should be able to present themselves well in the interviews as first impression remains to be last impression, the fact of the matter also includes that at times first impressions should not be considered everlasting ones and can be varied and subjective since candidates facing interviews for the first time are often nervous, a little scared and at times even forget how to introduce themselves in the very first round of selection. At times it has also been observed that some of the best candidates are not able to speak in group discussions as well which often have them left out from the list of 2nd round which talks about their area of interest and talent, due to which they often feel depressed and low and their morale goes for a toss. However, in my personal opinion one must not take this otherwise but continue and try again next time with more confident approach.

  • Why do Rejections take place when applying for Jobs?

The word Rejection is looked at in a very negative way as a perspective by candidates especially freshers who are applying for jobs in the hospitality industry. There are various factors which are linked to rejections from the industry point of view which must be well known to all seeking suitable positions leading towards their dream destinations.

  • Personality Speaks: While personality has its own implications to an interviewer it has a lot to speak non-verbally as well even before the candidate speaks a single line. Judgements are often based on experience of the interviewer and at times are laid down by the brand which is selecting or recruiting as well.

  • Being Yourself Matters: At times it has been observed that a few candidates while appearing for interviews carry a mask over them and try to cover up their flaws and some even speak with foreign accents and want to showcase their English to be over polished and internationally governed which doesn’t work for many.

  • Not Mentally Prepared: While some candidates apply for job interviews out of pure passion and interest some do it in peer pressure and some of them are just there for mere formality.it must be known to the applicants that your mind and thoughts need to be aligned with your speaking abilities and body language which is all looked at and evaluated no sooner you are sitting on that hot seat.   • Technical Glitch Factor: Applying for technically governed jobs like front office, food & beverage service, housekeeping & food production calls for a complete check on basic knowledge department wise. The interviewer often has a list of FAQ’S which are a part of his/her questioning process. The candidate is quite often told about this much before the interview but at times the memory doesn’t support the occasion and the momentary dis-illusion turns out to be a mess for the offer.at times the interviewer also twists & turns the basic question just to see the responsiveness and clarity of thought in the candidate but quite often it has been seen that the results are not too positive. 

  • Not Being a Good Story-Teller during the Interview: this industry is all about experiences & sharing of thoughts, views and opinions. While the candidate expects to get a job by just having an impressive format of his/her resume, it calls for much more. there are observers too in an interview and while one is asking a question one is watching upon the candidate as well trying to read between the lines and gauge the exactness and or imperfections. Some interviewers are not convinced with the way the candidate speaks or shares experiences as asked by them and therefore do not wish to see them in the next round and while some are expressive and outspoken and are able to create a sense of interest in the interviewer with their telling skills.

  • A Mis- Match Effect of Dilemma: At times all seems to be going well for some candidates in the interview round after round and there seems to be a ray of positive hope being developed in the mind that yes, I am able to make it further. While some properties do have multiple rounds going upwards the hierarchy following protocol for selections at times certain candidates do have a hick up there at the finale rounds and while meeting with the boss too things and situations have been found getting bad to worse. What matters here is that the self-presentation & confidence needs to be maintained and thoroughly exhibited in front of the ultimate decision maker or head of the organisation. Confidence often makes life easy than complicated. 

  • What should be done ideally before appearing for Hospitality Industry related Interviews & allied applications?

  • Being Well Prepared & Aware: It is important to not just have an active mind towards making a decision to apply for a particular job which attracts as one of the best brands in town but to also have a mindfulness towards being practically being able to suit the same in terms of basic requirements. Some candidates do not look at their own basic traits, qualities and or requirements which the job offering party will not be able to compromise with. For instance, height factor for certain jobs calls for a certain figure on the scale which must be met up with. Similarly, there are some companies who are little particular on the overall pleasing aspects of a candidate’s personality to the effect of physical fitness, looking your age factor, being able to do justice to the job etc. all these small aspects are sometimes ignored by the candidates.

  • K Y C – Know Your Candidature: As a very important piece of advice which we wish to extend to all candidates from the industry point of view is to know why you wish to join a particular department or section in the industry. For instance, a very common experience we face is the candidate says I like food production or kitchen & bakery as my area of interest. The next thing we wish to hear from him/her is that why kitchen? What is so fascinating in kitchen for you? What makes you feel that you are the right candidate to be joining us for kitchen? These are some of the finer aspects of the job and the candidate which we assess at times and we take a call whether or not to take him to the next round of selections. Similarly, it applies to front office as well when asked about walking a guest and walking away a guest from the hotel. We expect that these basic facts are well said and proven to the interviewer.

  • Read up the facts & figures beforehand: Every hiring company or team of recruiters would wish to see the interest level in the candidate who is aspiring to be on board the brand. It simply starts from checking the facts and figures well in advance before the interview. Putting the important facts and names of important people in that protocol on your writing pad, keeping note of how many rooms does the hotel have, which all outlets are available, who is the director or general manager of the hotel etc. it is also imperative to know the contact number of the property, the website address to make an impressive remark if at all asked and verified during the interview process. It not only shows your real interest in the company but also displays a fact that you like to get into details and understand the finer aspects of the company you are applying for.

  • On a Concluding Note, on Mindfulness:

Interviews and selection process is not just offering a job and selecting a candidate for the same anymore, it is also creating an atmosphere of inclusiveness and participative development of the brand and self too. Being mindful also applies to the fact that one needs to be receptive, open to feedback, accepting change and also presenting a sense of self-improvement too.
