This Ganesh Chaturti, Celebrate with ‘Kesari’ from Vanilla Miel

Ganpati festivities are in full swing and this means a variety of sweets and goodies at all your celebrations. This year, add Vanilla Miel’s ‘Kesari’ to the mix. The Mumbai-based patisserie & chocolaterie founded by sisters Mansi and Isha Shetty, has just introduced a new dessert tart that is ideal for festive celebrations.

 

A tribute to the rich history of Indian sweets, each element of this tart is inspired (and maybe stolen) from the recipe books of the founder’s different family members. It features slow-cooked gajjar ka halwa, boondi-laced rabri mousse, and a motichoor topper with crushed pistachio and saffron slivers. Encased in an almond pastry crust, this tart is created as a labour of love - a humble something from their family to yours!

 

The gajjar ka halwa is ‘mummy’ certified – she learnt how to make it from Mansi and Isha’s Nani and can be found in the Vanilla Miel kitchen on most days, making the dish herself.

 

The boondi in the tart is a tribute to the girls’ memories of celebrating Ganesh Chaturti growing up – boondi laddoos were always a favourite dessert and therefore had to be incorporated into this tart.

 

The rabri is a recipe from Mansi and Isha’s father, who runs a restaurant in Mumbai. Patiently cooked and caramelized using fresh milk, this rabri forms the perfect backdrop to elevate the vibrancy of the halwa and the boondi.

Ardbeg enthusiast buys one-of-a-kind 1975 Islay single malt for £16million

 

National, July 2022: A one-of-a-kind 1975 cask of Ardbeg Islay single malt Scotch whisky, which survived the Distillery’s two brushes with closure, has been sold to a private collector in Asia for £16million. The oldest ever released by Ardbeg, “Cask No. 3” is incomparably precious, since little single malt was created at the Distillery in the 1970s and it was closed through much of the 80s and 90s.  Described as a “remarkable piece of liquid history” by world-renowned whisky expert Charles MacLean, Cask No. 3 will be bottled over the course of five years for its owner, giving her an unparalleled vertical collection of aged Ardbegs, which cannot be replicated for at least a decade. To celebrate the half-century of patience and generations of Distillery workers behind this “vanishingly rare” whisky, Ardbeg will donate £1million to causes on Islay.  

 

Far surpassing any previous auction records for a cask of single malt, Cask No. 3’s private sale is an extraordinary milestone in Ardbeg’s 200-year history. While the Distillery is famed for creating the world’s smokiest drams – and is among the most highly awarded of the smoky malts – its journey has often been turbulent. In the 1970s, the majority of its whisky was sold for blending. And since just a few casks each year were set aside for single malt bottling, stock from that decade has always been exceptionally hard to come by. Then through most of the 1980s, the Distillery was closed as its future hung in the balance. While Ardbeg re-opened for a time, it shut again in 1996 – some thought forever. Saved from extinction the following year, the Distillery has since gone from strength to strength. Today it has a near-cult global following, has won countless awards, and is enjoyed in the world’s most prestigious bars. But Ardbeg’s darkest days remain fresh in the memories of its fans even now.

 

Commenting on the sale, Thomas Moradpour, CEO, of The Glenmorangie Company said, “This sale is a source of pride for everyone in the Ardbeg community who has made our journey possible. Just 25 years ago, Ardbeg was on the brink of extinction, but today it is one of the most sought-after whiskies in the world. That is a reflection of generations of hard work: from those in the stillhouse who craft our smoky spirit to the warehouse staff who care for our casks over decades, to teams around the world who build the reputation of our whiskies with fans, bartenders and collectors”.

 

“While such a rare whisky is out of reach for all but one of our fans, we put the same passion and care into every bottle of Ardbeg as went into this exclusive single malt in 1975 – from flagship Ardbeg Ten Years Old, to limited-edition releases. Today, our new stillhouse is working at full capacity to make more Ardbeg available than ever, and whisky creator Dr Bill Lumsden is busy imagining many more surprising smoky releases for Ardbeg fans. Because when a business like Ardbeg gets rewarded for 50 years of patience, it gives us the confidence to keep investing in the future of our distillery, and in our island community. The journey continues!”

 

Created in a bygone era when the Distillery still malted its barley onsite, the smoky, balanced spirit of cask No. 3 was distilled on Tuesday, 25th November 1975, and laid down to age in two separate casks – a bourbon and an Oloroso sherry. Those casks were patiently matured by generations of Ardbeg’s skilled warehouse workers over 38 years. Then Ardbeg’s acclaimed Director of Whisky Creation, Dr Bill Lumsden, decided to marry the two casks, creating an even more extraordinary single malt. On 31st March 2014, he transferred their whisky into a single refill Oloroso butt, selected to give only the subtlest of wood influence. There it has remained ever since. Today, more than 46 years after its story began, this single malt is a smorgasbord of sherried, smoky aromas and rich, elegant tastes.

 

Over the next five years, Ardbeg will continue to mature Cask No. 3 in a secure location on Islay for its owner. Every year, she will receive 88 bottles from the cask. By 2026, this Ardbeg enthusiast will possess a unique vertical series of rare Ardbegs from 1975, aged 46, 47, 48, 49, and 50 years old.

 

Director of Whisky Creation, Dr. Bill Lumsden, who will oversee the cask’s ongoing maturation, said: “Cask No. 3 is an extraordinary taste of Ardbeg’s past. Its aromas are nutty, herbal, and smoky, while its tastes of tar, espresso coffee, and spearmint have an astonishing finesse for a whisky of such age. So little stock survives from this era, that this cask really is one of a kind. And its complex flavors are a testament to the extraordinary skill of the Ardbeg team who have cared for it over the decades. I look forward to exploring how it continues to evolve over the next five years.”

 

Experts have hailed the sale of Cask No. 3 as an illustration of Ardbeg’s unique appeal, and the investment value of single malt Scotch. Praising its exceptional quality, author and world-renowned whisky expert Charles MacLean said: “This truly unique whisky is a remarkable piece of liquid history – an evocative taste of what Ardbeg was like when it malted its own barley. Many old whiskies can go flat with age. But Cask No. 3 is a really lovely whisky, hugely complex, still having vitality after nearly half a century.”

 

On Ardbeg’s appeal to collectors, he added: “The factors which make a particular whisky investable are threefold: rarity, flavor, and variety. And collectors do love Scotch, because of the provenance and history. Furthermore, there is a keen interest in smoky Islay whiskies. And Ardbeg is particularly rare – there just aren’t many bottlings of this age out there.”

 

Becky Paskin, whisky expert and founder of OurWhisky, explained that the strength of Ardbeg’s following and the continuing maturation of Cask No. 3, further increased its desirability. She said: “Cask No. 3 is undoubtedly alluring, and not just because of its own rarity. India’s first QSR chain specializing in pancakes is set to utilize the funding for aggressive expansion and marketing across India in the coming months. The brand which recently collaborated with leading kids’ entertainment channel, Cartoon Network to roll out a special summer menu for children will be further spreading its wings for such marketing associations.

Started by Mumbaikar Vikesh Shah in 2017, 99 Pancakes is a specialty QSR chain with 45 outlets operational across 14 cities - Mumbai, Surat, Pune, Varanasi, Indore, Jabalpur amongst others. The brand enjoys a dominant presence in Mumbai with 20+ outlets. Enabling to deliver temperature controlled fresh, hygienic eggs to Indian tables


Noida, May, 2022: Ise-Suzuki Egg India, Ise Foods Inc.’s Indian JV affiliate announced that it will begin field testing a delivering service of fresh eggs using digitalized refrigerated trucks with DENSO International India, Japan’s leading mobility supplier. In this field test, eggs of the Japan’s largest and the world’s 5th largest egg producer, Ise Foods Inc., (aka. Ise Egg), which will be available in Indian market from May 2022, will be delivered. Ise-Suzuki Egg India and DENSO aim to build a cold chain logistics network with Ise eggs, produced indigenously in Punjab with Japanese standard of technology and know-how to produce fresh, hygienic, and nutritious eggs. 

During the field test, the two companies will use Maruti Suzuki India Limited’s Super Carry cargo vehicle equipped with DENSO’s reefer unit. This CNG reefer truck can transport perishables with the temperature ranging from –20 to +20 degrees Celsius while capturing multiple data during egg delivery, such as inside cargo temperature, humidity, luminous and shock. Ise-Suzuki Egg India and DENSO will analyze these operational data captured during delivery, identify issues, and improve optimized supply chain to realize safe and secure food delivery. 

During the test operation, the reefer trucks will deliver high quality and fresh Ise-eggs in Gurgaon, Haryana and Chandigarh Tri-city areas. 


“We are going to introduce cold chain transportation for our eggs in Indian ecosystem. Therefore, this field testing with DENSO will provide us tremendous opportunity to advance our temperature-controlled delivery to keep our eggs farm fresh. Further, we could contribute to the delivery of safe, and secure eggs managed well throughout production, collection and distribution,” says Mitsuko Takahashi, Chief Operating Officer at Ise-Suzuki Egg India.

Ise Foods Inc. has formed a joint venture with Suzuki Motor Corporation, a parent company of Maruti Suzuki India Limited, since 2019. “I believe these all-Japan joint efforts will favorably impact on India’s cold chain in the future and ultimately attribute to reduction of India’s foods waste. Ise eggs, which will be delivered in the field testing, are machine washed and packed in a Japan standard hygienic factory making it a first such quality eggs ever produced in India. Therefore, the eggs are hygienic, very fresh and are made with Ise standard feed formula to be highly nutritious.

Karnataka Wine Board to integrate wine tours into popular package tours

KWB MD says, the role of the board is well-defined in the new Karnataka Tourism Policy as far as promoting gastronomic tourism packages and wine tourism in the country was concerned.

The Karnataka Wine Board (KWB), the only dedicated wine board in any state of the country, will try to integrate vineyard visits into popular tour packages operated by the Karnataka Tourism Development Corporation, as part of its marketing and promotion activities.

According to Somu T, managing director of KWB, the role of the board is well-defined in the new Karnataka Tourism Policy as far as promoting gastronomic tourism packages and wine tourism in the country was concerned.

Somu said that the state has huge untapped potential for wine tourism which is largely unexplored so far. Citing the kind of tourism revenues that wine regions like the Napa Valley of California generate, which far exceeds the revenue from the production and marketing of their wines, Somu said that the attempt of the KWB is also to make wine tourism a key activity of the Board.

Sarvesh Kumar, general manager of the KWB said that they are encouraging wine tours, an important aspect of the package tours which KTDC operate between Bengaluru - Mysore, Bengaluru - Hampi; Bengaluru - Nandi Hills, Bengaluru - Tirupati, among others.

He said that a lot of foreign tourists visit the heritage centres of the State like Hampi and Badami and there are a number of vineyards around these destinations which can be integrated into the packages.

While Big Banyan Tree winery near Bengaluru offers accommodation facilities, Kumar said that a lot of wineries like Sula and Grover offer day tours.

The KWB officials said that the effort of the board is to expand the grape cultivation to non-traditional areas like Sakleshpur in the Western Ghats.

KWB participated in the maiden VinExpo, a wine and spirit expo, in Delhi which concluded last week.
