November 2022: EHV International, the company behind Indian Accent, Comorin and the recently launched Koloman in New York, is excited to announce the opening of its newest concept, HOSA in Siolim, Goa. HOSA explores the culinary diversity of South India, beyond the familiar and also features a creative and energetic bar.

Rohit Khattar, Founder Chairman EHV/Old World Hospitality says. “We have always wanted to create a slightly more approachable and contemporary interpretation of the marvelous flavours of South India. Set on the waters opposite the magnificent St. Anthony’s Church in Siolim, we hope Goa embraces our newest concept.”

The restaurant seats 100 people, including 25 in the Patio. A beautiful Art Room functions as a gallery during the day and becomes a private dining area in the evening with a pre-function area replete with its own bar counter. In Phase 2 extensive outdoor seating shall line up the promenade set on the banks of the Chapora river.

HOSA literally means ‘New’ in Kannada and it is appropriate that its Brand Chef, Suresh DC is a Bengaluru resident. A culinary institute graduate, Suresh brings with him several years of experience in restaurants in India and Thailand. For HOSA, Chef Suresh has travelled extensively over the South to curate dishes that are unique and is presenting them in a contemporary manner while retaining their authentic flavours.

The HOSA menu goes way beyond the familiar. Dosas and appams are accompaniments to dishes like the Guntur crab fry and rich ghee roasts of jackfruit or goat. Small plates like Puli Munchi Wings and Gunpowder Kid Corn pair well with tropical-inspired cocktails. Wild Mushroom Pongal and the Curry Leaf Cured Snapper are other highlights. Cocktails feature classic, tiki and modern interpretations. An extensive wine list complements the food menu further.

Varun Sharma, who leads the award-winning bar at EHV’s other restaurant, Comorin, heads the beverage program at HOSA too. Operations are spearheaded by General Manager Sudhakar Singh under the guidance of Operations Director, Nitin Mathur.

The interiors have been designed personally by Rohini Kapur, EHV's Design Director, who was keen to create a contemporary thread while maintaining the character of the old Goan bungalow. She has paired contemporary furniture with Portuguese tiles; the art of old masters with cool, avant-garde (and even whacky) art from the South. Her design is modern yet respectful of the uniquely Goan setting. Her design vision was translated beautifully and further enhanced by veteran architect and designer Ashley Mascarenhas, who specialises in restoration, redesigning and revitalisation of old Portuguese villas and has done a terrific job at Hosa.

EHV’s Director of Development Vikas Bhasin was in charge of end-to-end project development and management from site selection to construction and the launch. He takes special pride in the fact that despite the site constraints, the most sustainable practices possible have been put into this restaurant

Tim Hortons plans to open 120 stores in India in next 3 yrs

The company could exceed the target as the first year is focussed on "building the foundation" with 20 new stores followed by another 50 new stores in the following 12 months, The company's India CEO, Navin Gurnaney said.

Canadian restaurant chain Tim Hortons plans to open around 120 stores in India in the next three years at an investment of up to INR 300 crore, a top company official said on Monday. The chain, which had in August opened its first outlets in India, is initially focussing on North India and will later expand to other regions.

"The commitment that I made to the board is in the first 36 months of operation, in the first three years, there'll be 120 stores (in India)," the company's India CEO Navin Gurnaney said.

The company could exceed the target as the first year is focussed on "building the foundation" with 20 new stores followed by another 50 new stores in the following 12 months, he added.

This, he said, will be followed by another 60 new stores in the third year.

All these stores will be company-owned, he said, adding the "investment per store is between INR 2 crore to INR 2.5 crore".

At present, Tim Hortons has six stores — five in Delhi-NCR and one in Chandigarh, and by December, three more stores will be opened, Gurnaney noted

"We're currently focused on the north, which is Delhi and Punjab but by early summer, late spring, we will be in Mumbai, Pune, Surat, and Ahmedabad. There will be some off-highway locations. We are actually considering a few different locations in Bangalore," the CEO said.

These will be in malls, high streets, airports, and office complexes, he added.

Bullish on the Indian market, he said, "It's the consumer spending in India. The global aspirations, the number of industries that are coming to India and adding to people's ability to spend more, the social media that makes them think differently globally, any retail brand has prima facie the possibility of success, then it depends on how well you execute".

‘Jingle and Mingle’ at the traditional Cake Mixing ceremony at Crowne Plaza New Delhi Okhla  

New Delhi: It is beginning to look a lot like Christmas at Crowne Plaza New Delhi Okhla, as the hotel hosted the timeliness traditional of the Cake Mixing Ceremony to usher into the X-Mas festivities.

 

The event also marked the launch of ‘Soulful Suppers’- the musical evenings at ChaoBella for the guests to enjoy the power-packed performances by popular music artists in the Delhi circuit. With winter being the best time for socializing, the melodies will add its charm to your romantic dates, barbeque evenings with friends, wine dinners and corporate get togethers. 

 

Pradipt Sinha, Director of Food and Beverage kick started the spectacular show of Cake Mixing by narrating fables and history around the Cake Mixing ceremony. He informed that the activity marks the arrival of harvest season and onset of Christmas festivities.  

 

In olden times, a lot of dry fruits and nuts were harvested during the autumn season and were used in the preparation of traditional Christmas fruit cakes. They used to store the mix for the coming year with a hope of another fulfilling and abundant year. Later, this ceremony became a family affair where everyone got together and soaked the harvested fruits in wine or rum which are further dried and stored.” he shared.  

 

Now it was time for the most awaited moment of evening – The Cake Mixing ceremony. Amidst the refreshing autumn breeze, the alfresco area of ChaoBella was decked up with twinkling lights, Santa’s hut and shining props, ushering the spirit of festivities. However, the star of the show was the mesmerizing assortment of dry fruits such as cashews, prunes, pistachios, almonds, figs, apricots, raisins, nuts, black current etc. in a boat shaped cauldron.  The hotel patrons and team members rolled on their sleeves and wore the aprons to participate in a hearty mixing of the dry fruits with spices and spirits. The live music, varieties of Christmas bakes, Sangrias and Mulled Wine added to the charm of the ceremony.  

 

Post the ceremony, the mixture was put into airtight container so that it soaks up the spirits and spices. The same mix would be used by the Chefs to bake array of goodies such as Plum Pudding, Plum Cake Dandee cake, Mince pie, Christollen, Christmas cookies which will be available at French Heart - patisserie of the hotel. Guests will also have option to customize delectable Christmas hampers for gifting and indulgence.

The interiors depict a beautiful panoramic Californian landscape, with the pink and green colors being inspired by the breathtaking LA sunsets that paint the sky pink with a little tinge of Californian Greens.  The texture of the walls gives a classic rustic look which is contrasted by contemporary modern furniture that gives you a sense of opulence. The space has been developed to give the diners an experience of both formal and informal concepts Overall, the space strikes a fine balance between simplicity and complexity. 



The menu has been curated by renowned Celebrity Chef Ajay Chopra MD of Zion Hospitality pvt. Ltd. Offerings on the menu comprise Slayin’ Soups; Issa Green Wave (Salads); Savage Schnacks; LIT Burgonomy; (Sand)’ Wiches on Fleek; New York-style Pizzas; and live Josper Grills - a signature offering of the brand. In addition to these, one will also find a Kid's Menu and a lip-smacking variety of Desserts. True to its American roots, the meals are big, hearty, and more importantly, very delicious. Some of the signatures on the menu include Pescado Chowder; Southwest Burrata Salad; Chicken Popcorn Salad; Big Boy 20-inch Wood Fired Pizzas; Tenderloin Steak; and oven-baked Louisana Crab. Chef Ghai is renowned for earning upmarket London restaurant Jamavar a Michelin Star in under a year, the first ever Indian chef to achieve such an accolade in the UK. Rohit Ghai has become one of the culinary world’s most in-demand chefs after a hugely successful decade on the London restaurant scene. Aangan meaning courtyard in English, is referred to as a warm and welcoming dining space where food is shared and enjoyed with family and friends. Complete with an alfresco terrace, Aangan majestically overlooks the turquoise waters of the Gulf of Oman. Taking inspiration from Oman’s heritage and India’s homeland, soaring ceilings and artistic archways create a magnificent sense of place. Guests enter the dining area through the grand double doors flanked with bold blue drapes, inviting diners to enter another world and enjoy the heartfelt hospitality Shangri-La is renowned for.

The extensive menu designed to share; allows diners to mix and match dishes to tease and tantalise the palate. Chef Ghai has taken a contemporary approach to traditional Indian cuisine and has created dishes that burst with flavour. Dishes include an Aloo Tikki, one of the most well-known street food dishes in India and set to be a favourite on the menu. The crispy potato cake with sweet and tangy tamarind, lentils and fresh mint is balanced with honey yoghurt to create a perfect combination of sweet and sour flavours. Ghai’s signature batter fried crunchy Masala Prawns get their spice from the Kashmiri chili. Cooked with sesame, peanut and tamarind, the perfectly cooked prawns are finished with a light dusting of desiccated coconut.

Accompanied by a twist on a traditional chokha, the Rogan Josh Lamb Shank dish is not to be missed. Slow cooked for eight hours until the meat is tender, the hearty dish is accompanied by a sauteed onion base, green and Kashmiri chili, cumin, coriander, and a touch of ginger. A smooth, velvety sauce is the perfect accompaniment to the rich and tender lamb.

 

Meanwhile the vegetarian Dhokla is crunchy on the outside with a soft cake like interior that is peppered with fresh apple and tempered baby heritage beetroot. To finish, a sweet, fresh Mango cheesecake is finished with green pistachio and a little kick of pink peppercorns to perfectly balance sweet and savoury flavours.

 

To complement the dishes, an extensive beverage list has been carefully curated with wines hailing from old and new world vineyards.  Expertly crafted cocktails include the signature Gin & Tonic Pushpanjali, meaning a handful of flowers in English. Meanwhile, the whiskey-based cocktail Somras packs a punch and is a cross between a Manhattan and an old fashioned. The drink is inspired by the Sanskrit culture and was believed to have been consumed as a potion by the Hindu gods to remain immortal and invincible.

Bringing the strictly limited edition launch to India is Ardbeg’s first step in fulfilling the growing demand of its prestige offerings in the country. 

 

Produced in small batches and released year-on-year, Ardbeg Traigh Bhan 19 Years Old Batch 4 is an exceptionally rare and ever-changing whisky, drawing its inspiration from Islay’s Traigh Bhan beach, known locally as the Singing Sands. Matured with a higher proportion of Oloroso Sherry casks, Batch Four is subtly different to the previous releases of Traigh Bhan, taking on more flavours of chocolate and raisin, alongside a distinctive mentholic character.  

 

This sublime dram is the epitome of an aged Ardbeg. On the nose, rising aromas of herbal pine and fennel flow into sharp notes of citrusy lime sorbet and medicinal lozenge. On the palate, an intense wave of wood smoke leaves ripples of decadent dark chocolate and ground coffee in its wake. Sweeter notes of lemon curd and peanut brittle cut through the swell to reveal delicate hints of creamy raisin fudge and hazelnut. Finally, menthol, fresh lemongrass, aniseed, clove and white pepper emerge from rich, smoky depths.

 

The taste profile isn’t the only thing that changes year-on-year. Each Traigh Bhan whisky carries its own unique batch code, batch symbol and signature from one of the Distillery’s famous faces – this year it’s Colin Gordon, the Distillery Manager

The limited edition Ardbeg 19 Years Old Traigh Bhan Batch 4 from the prestige range, will be exclusively made available in Travel Retail outlets at Mumbai and Delhi International Airports from October 15, 2022 at a price of INR 24,000.

Nose On the nose, rising aromas of herbal pine and fennel flow into sharp notes of citrusy lime sorbet and medicinal lozenge, while eucalyptus and saddle soap follows on the breeze. A splash of water releases a cascade of hazelnut, sweet vanilla, and currants before rich minted chocolate brings the nose to a close.

 Taste                             An intense wave of wood smoke crashes over the palate, leaving ripples of decadent dark chocolate and ground coffee in its wake. Sweeter notes of lemon curd and peanut brittle cut through the swell to reveal delicate hints of creamy raisin fudge and hazelnut. The allure of this rare dram continues with suggestions of more medicinal, spicy notes. Menthol, fresh lemongrass, aniseed, clove and white pepper emerge from rich, smoky depths.

 

Finish:                           Sweet and peat collide with creamy vanilla fudge, dark cocoa powder,

 and a warm, woody clove tingle. A sharp, intense, and satisfyingly   

 long finish.
