How did it all start? Share your culinary journey with us.

I was lucky to grow up in a culture – rich cosmopolitan city and along the way crossed paths with people of varied cultures and states. My curiosity was piqued by their cuisine, which grew into a passion over the years and that how picked a career in the culinary arts. 

I completed my degree in the year 2004 post which I joined Hyatt Regency Mumbai as a commis chef and then grew up the ranks to Chef de Partie. I got an opportunity to work for Michelin Star Chef Raymond Blanc in the United Kingdom for couple of years. I then moved back to India and worked with a few international chain of hotels as Head Chef and Executive Chef before joining Hilton. 


What are your earliest memories of the kitchens you worked in?

I used to enjoy watching cookery shows on television in late 90s and started cooking at a young age as my mother has a full-time job. I found it delightful to lend my mother a helping hand in preparing dinner when she got back from a long day at work.


A dish your patrons/guests love

Although we serve more than 5 cuisines at our restaurant, coming to Goa most of our guests enjoy eating Goan delicacies like Chicken Cafereal, Goan Prawn Curry and Masala Fried Chonak.


A dish that you love but do not have on your menu

Pork Sorpotel, as it requires the correct techniques of pickling the meat and use of the traditional spices mix. 


What according to you does it take to become a successful chef?

In order to become successful chef one needs to have strong fundamental knowledge about the entire food processing cycle, updated on modern trends, maintain consistency and quality of food. 


What advice would you give to a young culinary student?

Stick to basics! The early years of your career should be dedicated to learning. You should never be afraid to ask a question in the kitchen. Patience is the key ingredient you should never run out off.


What instruments/ equipment/devices you cannot imagine working without?

I cannot imagine working without a Sharp knife, Cooking Hob, Mixer grinder to name a few. 


Your favourite Ingredient is…

I like to use ingredients which are local and  seasonal like the wild mushrooms we get in Goa during pre-monsoons, the fresh cashew nuts during early summers to name a few.

Tell us about your journey as a hotelier.

I started my career in the hospitality sector more than 30 years ago in Switzerland, as a passionate hotelier keen on providing outstanding client experiences. I gained insights while working, from the front line of operations to the corporate office with top professionals at hotels around Europe, the Middle East, and Southeast Asia.  

What are some of the trends you see impacting the hospitality industry?

Sustainability and eco-mindfulness have become increasingly significant with hotels and guests embracing responsible practices. At Anam Cam Ranh, we have a robust farm to table concept as we invest in our on-site herb and kitchen garden. At Anam Mui Ne and Cam Ranh, we introduced eco-friendly wooden key cards, replacing plastic water bottles with recyclable glass bottles, plastic straws with rice straws, plastic bags with bamboo bags.


What tech would you like to see in operations? What operational problems need tech solutions?

I believe that technology can help streamline operations and enhance the guest experience. In operations, I would like to see more efficient inventory and resource management systems that reduce waste and increase cost-effectiveness. My motto has always been: Automate the predictable, so you can humanise the exceptional! Embrace new technologies to take care of the predictable.

What is the one technology, app, or software feature you would like to see? 

A comprehensive guest app that not only facilitates seamless check-in and room control but also offers personalised recommendations for activities, dining, and local experiences. Technology is also a major facilitator in offering cutting-edge MICE facilities. It plays a pivotal role in delivering exceptional experiences for large-scale and corporate gatherings at The Anam Vietnam. We are constantly striving to stay at the forefront of innovation. Advanced technological infrastructure in our meeting rooms, including projectors and state-of-the-art sound systems, to help us elevate our capabilities.


What do you think it takes to succeed in this industry?

I feel one must be enthusiastic about the process to offer guests heartfelt services. In this ever-evolving industry, adaptability is an asset. One must cultivate strong leadership, good communication, and the ability to encourage and empower your team. A grasp of the business side of hospitality, including financial management and stakeholder relationships, is essential for long-term success.

Two things you would like to change in the industry.

I would like to recommend the need for more extensive and inclusive training and development programs as our industry is built on the shoulders of its staff. We need to address retention as the high turnover rate and retaining skilled professionals remain a challenge. We should focus on creating more attractive career paths, providing growth opportunities, and inclusive environment. At Anam Mui Ne, we encourage our staff members to don traditional Cham costume and participate in culturally immersive processions. At both the properties, we invite family members to conduct cooking classes for guests.   

What are the attributes you look for while selecting or hiring? If someone wants to work with you, what should they do?

We search for individuals who share our enthusiasm for our brand, and hospitality and have a strong work ethic. The ability to adapt to changing conditions is appreciated. 

What is your favourite question for a candidate interview and why?

One of my favourite interview questions is, “Can you share a time when you demonstrated exceptional teamwork in a challenging situation?” This question reveals a candidate’s ability to communicate effectively, problem-solving aptitude, and maintain a positive attitude in difficult scenarios. 


What advice would you give a young, aspiring hotelier for their internship?

I would advise aspiring hoteliers to be proactive and keen to learn throughout their internship. Learn all you can about the organization, from visitor interactions to operations. Enquire, seek guidance, and don’t be hesitant to try new things.

Tell us about your journey. How did it all start?
In my childhood, I dreamt of a different life. My father, a soldier in the Indian Army, was my hero and I wanted to follow in his footsteps, to wear the uniform. But life has a way of surprising us. At seventeen, I found myself in a hotel school and soon after, I stepped into a world of 5-Star hotels. It was a humble beginning, but this path would lead me to places beyond my wildest dreams. For five years, I served guests at renowned hotel chains like IHG and Hyatt in India while gaining valuable lessons in hospitality.

A pivotal moment arrived when I was presented with the chance to venture to Scotland. There, I had the privilege of working at renowned luxury hotels, including the renowned 'The Gleneagles' in Perthshire and Hilton Glasgow, further expanding my expertise and refining my craft. In 2015, I returned to India and joined Caravela Beach Resort, a sprawling, independently run, 23-acre estate on the Goan coast. Here, my journey took unexpected turns as I transitioned from roles in Food and Beverage to Rooms, wearing different hats and embracing diverse challenges with determination.

Progressing from Director of F&B to Executive Assistant Manager and eventually assuming the mantle of General Manager. Caravela has a defined culture and it influenced how I think of leadership and became a leader myself. In my current role, “I oversee our 201-key, 5-Star Deluxe golf resort on the shores of the Arabian Sea,” where we strive to deliver unforgettable experiences tailored to the discerning tastes of our guests. Looking back on my journey, I am grateful for the opportunities I received and lessons learnt along the way. As I continue in the dynamic world of hospitality, I remain committed to strive for excellence and creating memorable moments for each and every guest we have the privilege to serve.

What do you think it takes to succeed in this industry?
Passion is paramount in our industry. If you genuinely enjoy connecting with people, it’ll set you in the right path. Equally important is the combination of hard work and dedication. Giving your best effort day in and day out is essential. In a dynamic hotel, where many individuals are doing similar tasks, standing out and advancing calls for a willingness to invest extra effort and a continuous desire for growth. Along with this, continuous learning, whether through on-the-job experiences or participation in various training programs, the opportunity to expand your skill set is invaluable. Last but not the least is being curious, being aware of what is happening around you and how you can leverage situations to your success.   

What are the attributes you look for while selecting or hiring?  If someone wants to work with you, what should they do?
Hiring is undoubtedly a tough task, as it requires aligning the aspirations of individuals with the needs of the business. During my interactions with prospective candidates, I strive to understand their motivations for applying to Caravela. While experience certainly holds value, I place great emphasis on assessing candidates' attitudes and their approach to learning. In many instances, a positive attitude and a genuine thirst for knowledge can outweigh a lack of experience.

What is the single factor that got you your promotion?
With humility, a promotion comes… being best among the people you are operating, building trust and creating a reputation for excellence and repeating all of it every day. There’s no single factor that can bring in success. It’s the combination of all of the above that creates a mindset which can lead to success.

What are some of the trends you see impacting the hospitality industry?
While my journey in hospitality over the past two decades has witnessed significant transformations, particularly in terms of reach and technology, it's essential to recognize that the core principles of guest service remain unchanged. Looking ahead, it's evident that future shifts will predominantly revolve around technological advancements.

Tech is now an enabler for great hospitality. Can you share with us some of the techs that go into creating your guest experience? 
Today, guests increasingly rely on digital platforms for booking accommodations, upgrading their stays, and streamlining check-in processes through our web links. Ordering services via QR codes and settling bills using UPI are now commonplace practices. Yet, middle of these technological advances, the old-world charm of luxury hotels endures, driven by the timeless essence of personalized service and genuine people connect.  As we navigate the evolving landscape of hospitality, it's crucial to strike a balance between embracing technological advancements and preserving the authentic guest experience that remains at the heart of our industry.

Two things you would like to change in the industry.
First one for me will surely be swift integration of technology in harnessing data for predicting guest preferences and customized experiences. It can help revenue generation, increase operational efficiency in near term and create a strong brand recall value for guests. The next thing will be to break the stereotype that entry level hotel work is only for younger generations. The industry can always offer promising options for the mature job seeker from other industries while successfully balancing human capital. Getting into hotels is a great choice for anyone with a genuine interest in talking to people and helping them.      

What is your favourite interview question for candidates’ interviews? and why?
I mostly ask questions around Caravela’s core values. Although candidates need to have the hard skills that are important for the applied job role, however, this can be trained. More important is whether the candidate has the right attitude, is willing to learn and share similar values as us.

I started my career with the Luxury Collection Hotels of Marriott International, Hyatt, and Mahindra, where I contributed significantly to their prestige. Venturing into pre-opening roles at The Lalit Mumbai and The Westin Goa where I showcased my strategic acumen. At The Lalit Mumbai, I upheld the brand's high standards with my culinary expertise and my commitment to excellence. At The Westin Goa, I played a key role in the successful launch of the property. Currently, I am working as the Executive Chef at Courtyard By Marriott Bengaluru Hebbal and I am very excited about where my journey takes me.

My earliest kitchen memories were a blend of enticing aromas, sizzling pans, and the lively buzz of culinary activity. It was a time of excitement, learning, and camaraderie, laying the foundation for my journey as an Executive Chef. My advice to a young culinary student would be to prioritize mastering the fundamentals of being a good chef. A solid foundation in basic skills not only forms the cornerstone of your culinary expertise but also serves as the stepping stone to higher roles in the future. Embrace the basics, as they are the building blocks that will elevate your culinary journey and open doors to greater opportunities in the culinary world.

As an Executive Chef, certain instruments, equipment, and devices are indispensable to the seamless functioning of the kitchen. Foremost among these is a reliable set of high-quality knives, an extension of my culinary expertise. Moreover, precision-controlled cooking equipment, such as sous-vide machines and induction cookers, play a pivotal role in achieving consistent and exceptional results. The reliance on technologically advanced kitchen gadgets, like temperature probes and digital timers, ensures accuracy in cooking processes. Ultimately, a well-equipped kitchen not only enhances efficiency but also empowers me to bring creativity and precision to every culinary creation.

One of my all-time favorite ingredients would be Staranise.

Growing up in a family of coffee planters in Coorg I had the opportunity to be a part of the hospitality sector since the very beginning. Tourists and travellers from around the country would come to visit the beautiful western ghats which allowed me to embrace hospitality early on as a part of the culture. The exposure also helped me build a successful career in the industry as I knew the etiquettes of hosting guests offering them a comfortable and experiential stay. 

What do you think it takes to succeed in this industry?

Hospitality as an industry demands you to be on toes all throughout. The three most important things to succeed in my experience is Integrity,  goal-setting and employee motivation. Servicing customers comes with a lot of responsibility and their satisfaction is our top most priority. 

What are the attributes you look for while selecting or hiring?  If someone wants to work with you, what should they do?

I am myself a very dedicated and a sincere individual and therefore I look forward to working with people who are excited about their work. During interviews my criteria of selection is always looking for candidates who want to grow in the industry and learn something new every day. Candidates who are enthusiastic about their work will always deliver the best results and having a positive attitude towards life gives a person immense positivity. 

What advice would you give to a young, aspiring hotelier for their internship?

My advice to all young aspiring individual who want to start a career in hospitality is, develop excellent communication skills, be soft spoken. Work hard and always enter the room with a positive outlook. Make sure to be a leader in whatever you do and it can take you places. Always priorities your work and sincerely perform your duties the best in your capacity with a proactive approach and you will never have to look back.

Consumer preferences are evolving to prioritize experiences over material possessions, sustainability practices, personalized services, and technology integration.

What tech would you like to see in operations? What operational problems need tech solutions?

Technology is an integral part of all industries now and hospitality is no different. Something that I personally look forward to now is tech integration to enhance communication between the staff and customers for a seamless transaction. 

What is the one tech/app/software feature you would like to see?  This could be for guests, operations, etc.

More focus on Virtual reality & Automated Text Messaging is definitely a feature that I believe I would like to experience more. It will also help the industry keep up with trends. 

Two things you would like to change in the industry.

There is a lot for scope for more women to enter the hospitality industry and we should definitely empower more women with opportunities. The second would be gender discrimination, while hospitality as an industry is very welcoming and warm it is time we start respecting women the same way we do with men without any discrimination or bias of any form. 

What is your favourite question for a candidate interview and why?

I always ask all candidates about their dreams and how do they plan to pursue them because it gives a lot insights about a candidates personality. It tells how passionate and ambitious they are in life and those are the qualities that reflect in workplaces.

Learning from scratch and overcoming obstacles are all part of the journey to success.

In 2005, I commenced my journey as an Operations Trainee at The Grand in New Delhi. Later, in 2008, I joined Ambassador-IHCL SeleQtions in the same city, where I grew from a Captain to a Restaurant Manager and eventually to the Food & Beverage Manager at Taj Ganges, Varanasi. After successfully leading the Food & Beverage team, I was promoted to the Operations Manager of the hotel. Before joining Pilibhit House, Haridwar- IHCL SeleQtions, I worked at the Taj Ganges and Taj Nadesar Palace, Varanasi.

With my IHCL values, leadership guidance, hard work, and determination, I climbed the position to become the Hotel Manager at Pilibhit House, Haridwar- IHCL SeleQtions. Along the way, I was fortunate to learn from some of the most prominent leaders in the industry, which gave me valuable insights and lessons that helped me achieve my goals and reach new heights. I've realized that teamwork and support are essential in overcoming challenges in the hotel industry. Together, we can achieve great things.

What do you think it takes to succeed in this industry?

With the right technological solutions, hotels can streamline operations, provide personalized experiences, make data-driven decisions, optimize revenue, and ensure the safety and security of their guests and staff. AI-powered facial recognition systems improve hotel operations through streamlined check-in, enhanced security, and a seamless guest experience. Additionally, AI is increasingly used in revenue management systems to optimize pricing strategies, leading to higher revenue and profitability for hotels.

Two things you would like to change in the industry. 

The hospitality industry is on the brink of transformation, driven by a growing movement towards sustainability and inclusivity. By reducing carbon footprints, minimizing waste, conserving resources, and promoting responsible tourism, we can create a more sustainable future for our stakeholders and the world around us. The hospitality industry is going to be driven by experience creation and personalization largely. The trend of bleisure along with a sustainable mindset will continue to grow too. We also see a growth in the travel of senior citizens as a segment.

I wish there was an app that was a one-stop solution for sustainability but for now, we need to use available online data to grow awareness and have a wider reach around this topic.

This could be for guests, operations, etc.I particularly think that this is a tough one as we offer a variety of options to our guests and associates. However, it would be great to build a platform that brings hoteliers together as an industry where we find a common voice.

In the current times, I would like to see a lot more candidates embrace industry roles as a career option. I would want people to stop talking only of the long hours and hard work put in by a hotelier and instead talk of the institution it is along with opportunities and growth that they see within the industry.

When and What inspired you to start Red Sky Hospitality, and how does the company aim to address the unique revenue management needs of Indian hotels?

I moved to India in 2009 and started working as the Corporate Head of Revenue Management and Distribution for a Luxury Hotel Chain in India. After working for 2 years, I decided not to work for any hotel company in India and to start something of my own. Revenue Management is the only thing I am good at, so I gave it a shot and started a Hotel Revenue Management Support company. Everyone discouraged me, saying hotel owners in India would never agree to share confidential data with me. I gave myself 2 months to see if this would work. I started the company under RevMutu in 2012, and I was lucky to receive a very good response from hotels. Hotel owners saw a significant growth in revenues through electronic channels. We did not do any business development or sales for the last 10 years; still, our business grew significantly through references and good words from our clients.

In the Indian market, we noticed that the front office and reservation teams often manage price points and electronic channels. These employees have not undergone proper revenue management or analytics training. Revenue management in India is often done based on gut feeling rather than data analytics. We saw an opportunity to apply proper revenue analytics and turn them into actionable insights to generate revenues the right way.

(CAN YOU PLEASE ELABORATE HOW THIS PROCESS IS DONE IN A VERY SIMPLE WAY)

Red Sky Hospitality has always been working towards bringing quality to revenue management practices, and at the same time, we believe in trying new, unconventional ways to generate revenue. 


Tell us something about yourself and How this started?

I always wanted to become a commercial airline pilot, but due to a lack of funds, I couldn't pursue that dream. Instead, I joined IHM Pusa, Delhi for a 3-year Hotel Management course and was more interested in Front Office than Kitchen and F&B. While studying, I started my first business called "Elegant Caterers." It was a part-time business that gave me experience in dealing with clients, time management, organizational skills, and financial management. After successfully completing my 3-year Hotel Management course, I had the opportunity to travel to the United Kingdom.

Starting my career was a bit challenging, but I was determined to grow. I began as a receptionist in a 617-room Heathrow Airport hotel. At the same time, I was working with KFC in the evening. Within 6 months, I was promoted to Front Office Supervisor, and within another 2 months, I became an Assistant Front Office Manager. I was eventually pushed into Revenue Management, although I had no prior experience in it. My bosses at IHG were very supportive and provided training. I had a two-month timeline to learn revenue management practices and apply them in real business.

Impressed by my performance, I was asked to take care of two key properties in the IHG Portfolio: Crowne Plaza Heathrow and Holiday Inn Heathrow. During my tenure, I completed my Revenue Management Degree and Honors course organized by IHG. I was then invited to join the Revenue Development and Training Team, where we supported over 650 hotels in Europe, the Middle East, and Africa in terms of system installations, revenue management training, system training, and revenue audits.

I eventually moved to India and joined The Lalit Suri Hospitality Group as Corporate Head of Revenue Management and Distribution. I launched the Central Reservation Office for the group and had the opportunity to use my knowledge and skills to grow the electronic share of the company. I made various changes and launched new initiatives in India, such as "Stay More, Save More" and "Last-Minute Deals" back in 2009-10 to capture market share. The CMD and directors at The Lalit were very supportive and gave me the freedom to perform. After working for 2 years in India, I decided to start something of my own and founded RevMutu, which is now rebranded as Red Sky Hospitality. We were the first company to launch revenue management support for hotels in India in 2012.

During the COVID-19 pandemic, we developed a software called Precium, which recommends hotel room price points using various algorithms and machine learning. We are further enhancing the system for accurate forecasting and other functionalities to support revenue managers and hotel owners in making the right business decisions. In 2022, I signed a Global Preferred Partnership agreement with Sabre Hospitality. We are now the official resellers and Level 1 support providers for three continents: Asia, the Middle East, and Africa.

I have a fantastic team that has supported me during both challenging and successful times. I credit my team for our achievements. Our guiding principles have always been to focus on quality rather than quantity and conduct business ethically and honestly.

Could you provide an overview of the challenges that hotels in India face when it comes to revenue management?

Currently, the biggest challenge faced by the Hospitality Industry in India and Globally is ‘Skilled Staff’ with the right attitude. Revenue Managers are switching jobs very frequently. This is where RedSKY Hospitality comes in and supports hotels without any break in between. Revenue Managers going on Holidays, Sickness, leaving jobs – we take care of it and don’t let the Revenue gaps come in. The other challenge faced by hotels in Revenue Management is technology. There are many options available in the market in terms of Automated Revenue Management (ARM) software and other data reports to support decision making, however, does the hotel have the right Skilled and Knowledgeable Revenue manager to manage the Automated Revenue Management Software. Automation does not mean the software will do everything for you. Revenue Management has many sections and ARM will only take care of some sections. We developed PRECIUM keeping in mind the lack of skilled Revenue Managers. Precium is easy to set up and easy to use. Precium is always there to support hotels with right Pricing decision making. There are many other challenges which we come across on a daily basis – Systems not integrated resulting in inaccurate inventory management, inaccurate data resulting in inaccurate decisions, Rate Disparities, etc. RedSKY Revenue Management experts fix all the challenges to ensure a smooth long-term growth of the business. 



In what ways does RedSKY Hospitality leverage technology and data analysis to optimize revenue strategies for its hotel partners?

We have developed our own Revenue Management software – PRECIUM, which is easy to use and does not overburden the Revenue Managers. We work with over 6000 Rooms inventory, and it’s all taken care of and managed by PRECIUM. Our software has Pricing recommendation accuracy of over 95%. We are adding new features & functionalities in PRECIUM, and it will be launched in the market soon. Currently, it's used by our clients only. We also use various third-party reports to get data analytics for accurate decision making – Like Rate shopping, STR, Agency360 etc. We are also working on building our own Rate Shopping Tool which will give real time Competitor online Rates. Market Intelligence is very important for a Revenue Manager, and we are working towards getting the right market intelligence to grow Revenues for our Clients.  

We have developed our own Revenue Management software, Precium, which is user-friendly and doesn't overburden revenue managers. We work with over 6,000 room inventories, all managed by Precium. Our software has a pricing recommendation accuracy of over 95%. We are continually adding new features and functionalities to Precium, which will soon be available in the market, as it's currently used exclusively by our clients. In addition to Precium, we use various third-party reports to obtain data analytics for accurate decision-making– Like Rate shopping, STR, Agency360 etc. We are also working on building our own Rate Shopping Tool to provide real-time competitor online rates, ensuring that our revenue managers have access to the right market intelligence to grow our clients' revenues.

Can you elaborate on the specific services or solutions that RedSKY Hospitality offers to assist hotels in maximizing their revenue potential?

We offer remote Revenue Management support to hotels worldwide. Apart from this, we conduct audits to highlight opportunities and gaps with recommendations on how to improve revenues and stop revenue leakages. We also offer Revenue Management training. As global preferred partners with Sabre Hospitality, we provide GDS connectivity and the world's best booking engine, Synxis. We are preparing to launch Precium, our Revenue Management software, and a Rate Shopping Tool very soon.

How does RedSKY Hospitality adapt its revenue management strategies to the dynamic and ever-changing hospitality industry in India?

Revenue Management is all about understanding the behavior of the market and, more importantly, understanding the behavior of the property. Any changes in market trends or property behavior are identified by our Revenue Managers through various market intelligence reports available to us. We work on both short-term and long-term strategies. Red Sky Hospitality is always ready to launch and try out new strategies to grow profitability for our partners, with a focus on accurate forecasting.

What kind of data-driven insights does RedSKY Hospitality provide to its hotel clients, and how do these insights contribute to improved revenue outcomes?


We look at the daily pace by day of the week to understand the behavior of each day. We conduct price elasticity tests to determine the right price point for the hotel to strike the balance between occupancy and ADR (Average Daily Rate) for optimum revenue and profitability. We closely study the market and the competition to understand their behavior and act accordingly to grow our clients' revenue contribution. Our data-driven insights include a deep analysis of market behavior, segment-specific strategies, and pricing recommendations to maximize overall revenue for the property.

Are there any notable success stories or case studies that highlight how RedSKY Hospitality has helped hotels achieve significant revenue growth through its services?


There are many case studies that showcase our success. We believe in thinking outside the box and implementing unconventional revenue management strategies. Our success is evident through the fact that the majority of our clients have been working with us since 2013. We work closely with our clients, offering flexibility to our Revenue Managers to try new approaches to increase profitability. We focus on optimizing every market segment to achieve the best overall revenue for the property. While we have delivered impressive electronic channel contributions to our clients, our primary goal is to ensure the overall growth and profitability of the business.


We are generating over 50,000 room nights with a revenue of over $4.2 million USD (INR 35 Cr) every month from electronic channels for our clients. We delivered over 30% electronic channel contribution to hotels in Kenya, increasing it from 12% contribution. Our hotel partners in North India deliver 45% contribution from the electronic channel with the highest contribution from Brand Website. Our hotel partners in Goa are enjoying high occupancies at a good ADR during low demand as well. 


But we do not measure our performance with electronic channel contribution. We are a Revenue management company and not an electronic channel management company. Our focus is how to optimize every market segment to get the best overall revenue for the property. We get involved with the budgeting process and do weekly and monthly forecasting to ensure the right strategy by market segment is implemented to get the best results. 


With the evolving landscape of guest preferences and online booking platforms, how does RedSKY Hospitality ensure that its revenue management strategies remain effective and relevant?

The fundamentals of Revenue Management remain consistent, but the strategies and actions may change. To apply accurate strategies and make the right decisions, revenue managers need precise data and the knowledge to convert that data into actionable insights. There are both short-term and long-term strategies. Long-term strategies typically remain consistent unless significant external factors come into play, while short-term strategies change more frequently in response to market trends and demand fluctuations.

Revenue Management is very dynamic and adjustments in short term strategies, if applied correctly, will result in Revenue and Profitability maximization. In RedSKY, apart from on job training, we conduct training sessions every Saturday to keep our team up to date with the latest trends and new strategies to be tested to see the results. We have many data sources and a large data bank to make the right decision for our partners. We aim to provide efficient, easy-to-use, and reasonably priced software to support the hospitality sector. In 2022, we signed a Global Preferred Partnership with Sabre Hospitality. We are working together to provide the best technology to the hospitality industry.

In the current scenario, the shortage of skilled Revenue Managers is a significant issue in India and globally. We are working towards training Revenue Managers to address this challenge. Other prevalent topics in the industry include the adoption of RevPAR (Revenue per Available Room) strategies and the need for accurate forecasting to support decision-making.


RevPAR strategy concept is still not accepted entirely by the Indian hotel industry. For RevPAR strategy to work effectively, forecasting by market segment accuracy needs to be worked on. RedSKY Hospitality is working towards delivering forecasting accuracy to within limits of 2%.

My journey into the hospitality industry began in revenue management under the mentorship of Mr. Ravish Swaroop at Praxis Services. My fascination for data analysis and numbers led me here. The analytical nature of revenue management aligned with my engineering background, providing a fresh perspective. You worked with renowned hospitality brands like Sayaji, MAYFAIR, Carlson Rezidor, Hyatt, and Marriott. What key experiences or lessons did you gather during your time with these prestigious companies that contributed to your success in entrepreneurship?

In my journey working with renowned hospitality brands like Sayaji and MAYFAIR, I had the chance to set up and manage revenue departments. Sayaji took me from being a revenue executive to understanding the intricacies of departmental setup. Could you tell us more about Playotel Hotels, the company you founded? What inspired you to establish this presence across India, and what challenges did you face during its inception?

How do you tailor your revenue management strategies to cater to the specific needs and challenges of the market?

Our revenue management strategies are uniquely tailored to each market due to our strong hospitality background. We leverage our deep understanding of hotel operations to develop data-driven, guest-centric strategies that address specific market challenges. Entrepreneurship often involves taking calculated risks. Can you share an example of a challenging decision or risk you took in your career and the outcome of that decision?

I firmly believe that embracing risks is pivotal in both entrepreneurship and personal growth. A defining risk I took was leaving my secure position at Hyatt to join Sayaji, despite having less decision-making power. I firmly stand by the notion that if you're not taking risks, you're essentially stagnant.

The outcome? Joining Sayaji was transformative. I played a crucial role in its growth, enriching my understanding of risk, leadership, and entrepreneurship. It's a reminder that calculated risks are just risks in disguise. As a CEO, I encourage our team to step out of their comfort zones, make informed decisions, and be accountable for the outcomes – because that's where true growth and success lie.

Lastly, as someone who has achieved great success in the hospitality industry, what are your future plans and aspirations for both Retvens Services and your personal journey in this field?

I've always believed that entrepreneurship is synonymous with taking calculated risks. In fact, it's not just a part of entrepreneurship; it's an essential element for growth and innovation. I've had my fair share of challenging decisions and risks throughout my career.

One significant risk I took was starting Playotel, a venture in the hospitality industry. It was a bold move, but it taught me invaluable lessons about business and customer service. Eventually, I made the difficult decision to leave Playotel to pursue new opportunities. It was a tough call, but it led me to start Retvens, a venture in the service-based industry.

Many would consider starting a service-based business a risky move, but I firmly believe that there's no such thing as a truly "calculated" risk. If you're not taking risks, you're essentially choosing the safest path, which, in itself, can be the riskiest choice. As an entrepreneur, you must take risks and take responsibility for your decisions and their outcomes.

In my journey, I've learned that every risk, whether it's starting a new venture or leaving an existing one, has the potential to bring growth and opportunity. My culinary journey was sparked by my father's small catering business, known as Guru Datta Catering. During my school days, I eagerly accompanied him during vacations to observe, savor, and relish the culinary experiences. This ignited a deep passion for cooking within me. However, my aspirations leaned towards modern cuisine and achieving a significant chef's position. Despite my desire to enroll in a Hotel Management course after completing my 12th grade, financial constraints compelled me to take a different path. I embarked on a three-year kitchen apprenticeship at Oberoi Flight Service in Andheri, Mumbai. This foundational experience paved the way for my entry into the culinary world.
Following my apprenticeship, I embarked on my professional journey at The Orchid Hotel in Mumbai, serving as a Commis from 1999 to 2002. Subsequently, I became a part of the pre-opening team at Hyatt Regency Mumbai as a Commis, which marked the beginning of a remarkable 14-year tenure. My trajectory within Hyatt was nothing short of transformative – progressing from Commis to Chef de Cuisine. Throughout my time at Hyatt, I engaged with diverse culinary outlets and collaborated with three accomplished Italian chefs. A pivotal moment occurred in 2007 when I had the privilege of representing India during a sponsored visit to Italy by the Italian Embassy. This exposure deepened my understanding of Italian cuisine and culture. In 2015, I sought fresh horizons and joined JW Marriott Pune as a Banquet Chef. Steadily, I ascended to the role of Executive Sous Chef, overseeing substantial events such as weddings and conferences. My journey led me back to Hilton Mumbai in 2019 as the Executive Chef before embracing roles at prominent establishments including Courtyard by Marriott Ahmedabad and Radisson Blu Kharadi Pune. A unique opportunity then arose to work with Kamat Khandan at The Orchid Balewadi, reuniting me with my culinary roots.

Editor: Tell us about your journey. How did it all start?

It was an interesting story and a difficult decision to choose hotel management as a career for a small-town boy with completely different aspirations for family & friends, every parent in that era of time wants their child to be a doctor or engineer. I also opted for the same but post one year of preparing for entrance exams I dropped this idea and opted for hotel management. In the initial phase only came to know that hotel management is not so easy, it requires effort in terms of learning and practicality. 

After successful completion of education with practical on-ground knowledge of the operation, the mindset was clear to progress in the diversified field of hotel operation. Like every field, the initial days of your job are challenging, it requires a lot of hard work, dedication, patience, and a positive mindset toward learning new skills and developing yourself. By God's grace I have been blessed with mentors who have always shown a path of success, mentored & guided me to achieve my goals. The best part of our life is we enjoy interacting with different people across various regions, being able to know about diversified cuisines, able to travel to different cities, and having first-hand knowledge of the same. At present, I am residing at Kolhapur which is well known for Mahalaxmi temple.

Editor: What do you think it takes to succeed in this industry?

Like every Industry our Industry also has similar attributes of success which are hard work, passion towards your job, the learning attitude is the key for success

Editor: What are the attributes you look for while selecting or hiring?  If someone wants to work with you, what should they do?

In recent years of time, everyone has wanted to succeed in a very short tenure which is creating a fragile structure in the Industry. I personally check the attitude & behavior of a person, how important this is job for him, what’s his thought process towards guests and his job, and his ability to work under the different situations which are often in our Industry.

As mentioned above the only factor that will promote you in your Industry or job is dedication towards your job, hard work, passion, trust in the team, relationship with the guest, and a positive learning attitude of your next-level role. 


Editor: What are some of the trends you see impacting the hospitality industry?

There are a lot of factors that are impacting the Industry, starting from admission in colleges, post covid Admissions in hotel management colleges reduced drastically which is impacting the supply of manpower, and demands in the Industry risen however remuneration have not improved as per other Industries, working hours are long and non-classified hotels has no proper policies. The college's fees have increased very high in turn the initial pay roles post-completion of courses are very low. The work-life balance and pay scale of the Industry need to be looked upon to improve the thought process of budding hoteliers.


Editor: Tech is now an enabler for great hospitality. Can you share with us some of the techs that go into creating your guest experience? 

In the 21st century technology plays an important role starting from the quick reservation to a single-touch checkout process. Let me tell you that chat boats are enabled which are quick in generalized responses, social media platforms have made things transparent where with a click they are able to see a 360-degree view of the property, and a detailed walkthrough of the property which includes rooms, restaurants, and banqueting. The restaurant reservation systems are upgraded, and food ordering and personalized information are stored. I-pad ordering of menu where you can visualize your dishes before ordering.

Editor: Two things you would like to change in the industry.

The Hospitality Industry is growing and we as Indians need to change the perspective of people on how they see a hotelier, still in the 21st century people think that either a hotelier is a waiter or a cook. We need to respect people working in the Industry. Awareness programs need to be created, proper benefit structure to be defined, Salary & working hours need be look upon.

Editor: What is your favorite interview question for candidates' interviews? and why?

I personally want to understand the attitude and behaviour of the candidate along with his family background which helps me to understand his responsibilities in his family and the need for this job to him, the level of his expectations towards guests and his family members. I believe in every position people reach they have the qualifications, knowledge, and skills for that job, so a major point for me is to see the attitude, if it's positive we can mold them as per our process, policy & expectations.

Tell us about your journey. How did it all start?

It all started when my roommate woke me up in our dorm room to learn the Taj Hotels’ Pre-Placement talk schedule! 

Indian Hotels Company Limited arrived at our campus, looking for HR & Sales MTs in the year 2006, 1 month before our graduation. I never knew that attending the pre-placement talk of the Taj would change my professional course.

I joined the Taj in 2007 as an HR Management Trainee in Mumbai and spent stints in New Delhi, Mumbai, Vadodara, and Bangalore. I left Taj in 2014, to join Hilton Worldwide as Human Resources Manager at their upcoming Doubletree Suites by Hilton Bangalore property. A pre-opening experience was something that I was looking for and this opened up a new chapter in my life.

I moved to Jaipur with Hilton Worldwide in 2016, after spending 2 wonderful years in Bangalore. Hilton Worldwide gave me opportunities to travel to many countries in Asia, including a wonderful week-long trip to Japan. I spent a little over 5 years with Hilton Jaipur and then changed sectors to Healthcare in 2021, owing to uncertainties in the hospitality space.

I spent 18 months with CARE Hospitals, as their group head of Talent Acquisition & HR Automation, based in Hyderabad. It was a wonderful stint again, a completely new sector, high-pressure but equally rewarding.

Post that, I moved to Mumbai with SKIL Corporate Travel as the CHRO.

What do you think it takes to succeed in this industry?

Resilience, resilience, and resilience!

The hospitality, travel, and healthcare sectors are labour-intensive where there are huge numbers of frontline workforce. In such people-centric work cultures, flexibility and resilience is the only tool one needs to succeed as the sector is extremely dynamic and leaders have to adapt to a fast-changing situation.

What does the future look like? For the industry, you, your project / initiative.

Very solid and promising. People have realized that all of us have “one life” and the COVID period showed us how vulnerable we are in this world. People want to live this “One life” to the fullest and the biggest stress buster is a vacation with friends and family. We have seen a delta growth of 40% in the travel and hospitality space. This trend will continue for some years now and I am happy to state that we are in a great place!

What are the attributes you look for while selecting or hiring?

I have had one philosophy for hiring talent since I started working.

“Hire for Attitude; Train for skill”

If a candidate is 60% ready, he/she should be hired without further ado. It’s the leader’s responsibility to coach the new team member. The team member will also have a learning curve and that needs to be nurtured. It is a great roadmap for the organization and the team members. Basically, a win-win scenario.

What is your favorite interview question & why?

“What do you do when the buck stops with you?” is my favorite question and I ask all the people I interview. The response tells me the manner in which they own up to their roles. The beauty of the response is that there is no right or wrong answer. It helps me gauge the person better and understand the personality. 

Share some of your secrets in keeping an engaged, safe, and happy team.

There is no secret. Give the team member a role that he deserves and keep rotating the role to ensure there is continuous upgrade on his skills which prepares him for the next higher role. Role engagement supersedes any other form of engagement that you do and only reinforces your efforts. A team member is an investment and it needs to be handled the way you handle your personal investment.

What does not exist in the world, but you would like it to?

Open communication does not exist in the world. One might argue otherwise but the reality is that there is always a hidden agenda in all forms of communication. Remove the agenda and you have a seamless approach to business.

How do you think AI will impact our industry? Specific jobs, processes etc?

It is a wonderful thing to use AI for some specific jobs and roles in our industry. For example, AI will chart out my 5-day itinerary to the Maldives in under a minute or prepare the job role and compensation based on a candidate’s resume.

However, it will never be able to understand human emotions, which a person hears while talking to me on the phone or understand the underlying skills a candidate has. The human element will not be discounted, especially in our industry as it is completely people-driven. AI will not be able to iron out my issues in Maldives because the person handling it at Maldives in another human being.

AI will only complement our jobs not replace them.

What is the one app/tech solution you would love to see? (ops, HR, training, customer service, anything hospitality)

An application that can track the efforts of team members. I am not sure about other sectors but it doesn’t exist in the hospitality/travel domain. An application running in the background on the machine or on the server that tracks individual-based efforts that he/she puts in the 8 hours. Analysis of the data from the application will give leaders a clear picture of the work schedules of their team members.

What are some of the trends you see impacting the hospitality industry?

I have gained over 16 years of valuable experience working with prestigious hotel brands such as Hyatt, Accor, and Marriott. During this time, I have had the privilege of being a part of the teams at some of India's most iconic hotels, including Taj Mahal Mumbai, Grand Hyatt Mumbai, Grand Hyatt Goa, Hyatt Regency Mumbai, including various Accor properties in Goa and Mumbai.

Editor: What are your earliest memories of the kitchens you worked in?

I began my culinary journey with humble tasks such as peeling onions, de-shelling prawns, and breaking eggs. Additionally, I was responsible for preparing 45 liters of fresh orange juice each day. In the absence of a chef, I even manned the egg station, where I had the opportunity to engage directly with our esteemed guests.

As a culinary artist, I do not have a singular favorite dish that I recreate for guests as my creations are constantly evolving. I take pride in my creations and meticulously craft each dish with precision and creativity. Garlic is, without a doubt, one of my all-time favorite ingredients. It possesses an unparalleled versatility that adds depth and complexity to a wide variety of dishes. The aroma of garlic sizzling in a skillet is nothing short of intoxicating, signaling the start of a culinary adventure.

The distinct crackle and pop that garlic emits as it cooks add an auditory layer to the sensory experience, further enhancing the dish's appeal. Rene Redzepi is another chef whose innovative approach to Nordic cuisine has made him a household name. His emphasis on locally sourced ingredients and commitment to sustainability have set him apart as a true trailblazer.

The Roca Brothers are a family trio whose creativity and vision have helped establish their restaurant, El Celler de Can Roca, as one of the world's finest. Their imaginative dishes, inspired by the flavors of their Catalan heritage, are nothing short of masterpieces.

Chef Alex Atala's work style is similarly impressive, with a focus on using locally sourced ingredients to create bold and inventive Brazilian cuisine. And last but not least, Francis Mallmann's expertise in open-fire cooking has earned him a reputation as one of the world's most innovative chefs.

For a more refined palate, "The French Laundry Cookbook" offers a peek into the meticulous and highly refined techniques of Chef Thomas Keller, a master of contemporary American cuisine. Editor: Tell us about your journey. How did it all start?
It all started with my interest in the hospitality industry and the genes of discipline I got from my father who was Asst. Commandant in Border Security Force. Being an alumnus of Delhi University and BSF Hostel, I first started to work at Sariska Palace, Alwar. It was a very nice learning experience for me as it was my first. After that, I was placed as Front Office Associate at The Kuchaman Fort which is also a unit of the Sariska Group of Hotels. It was a majestic property located in Nagaur district. Thereafter, I got an opportunity at The Laxmi Niwas Palace Bikaner(A Unit of MRS Hospitality). It is a part of the Royal Residence of the His Highness of Bikaner. Then I moved to Jaipur and worked with Hotel Jaipur Palace (Currently Sarovar Premiere) and Las Vegas (A Unit of Bajor Group of Hotels).

Then I moved to Jodhpur and started working with Hotel Park Plaza (Managed by Sarovar Hotels and Resorts) as Front Office Executive. After that, I was appointed as Front Office Manager at Chandra Group of Hotels where I got to learn and explore many things related to this industry. At that time, the destination wedding concept was introduced by the Group. It expanded with the openings of new Hotels Chandra Imperial and Chandra Grand where I got to learn about pre-opening strategies and execution of plans. I worked with Hotel Niky International as Front Office Manager,  Varaha Infra Ltd. as Admin and PR Officer, and then as a Room Division Manager at The Bayan Hotels and Resorts in Udaipur  

Currently, I'm designated as Sales Manager at The Fern Residency Jodhpur (A Unit of Pusa Hotels and Resorts). It is one of the best Business Hotels in Jodhpur.It offers 50 rooms, suites, leading environmental practices and various F&B outlets. 

Editor: What do you think it takes to succeed in this industry?

Hospitality is all about service, customer support, and personal interaction. Smile, be professional, and know what you are doing. The formula is simple but takes a lot of dedication. It is all about anticipating your client's needs and meeting the highest expectations. A more literal answer would be to find a mentor and shadow them.

Editor: What are the attributes you look for while selecting or hiring?  If someone wants to work with you, what should they do?

When I  want to hire someone for any current position, it's also helpful to understand where they want to take their career in the coming years. The ability to establish long-term goals and have the self-awareness to know how they want to steer their career will benefit you and your organization. Someone with a strong sense of where they're heading will be more motivated to learn new things, improve their soft skills, and meet the goals established for their position. Sometimes hiring is all about attitude.I also want to be sure that the candidates I'm hiring are honest in every aspect of their lives and career. Integrity means that they won't cut corners, won't provide misinformation, and won't deliberately obscure important information. Determining honesty and integrity doesn't have a specific form of measurement, but you'll be able to see how they comport themselves and verify some of this information in the references.

Editor: What advice would you give to a young, aspiring hotelier for their internship?
Being a successful hotelier starts with getting a high-quality education. Remember, there are no shortcuts to being successful in the hospitality industry. It’s through a quality mindset that you can learn all the necessary hospitality skills. Passion is at the root of success in our industry.

Editor: What are some of the trends you see impacting the hospitality industry?
The term ‘trend’ describes a shift in behavior or a more generalized situation change. With this in mind, hospitality trends may include changes in how customers behave, new ways of providing hospitality services, or general moves towards adopting new hospitality technology. A range of different factors typically influences trends.

For instance, the rise of technology like artificial intelligence has led to a trend where machine learning is used more regularly, and AI technology is deployed more frequently for customer service purposes. Meanwhile, virtual reality technology’s emergence has altered how many hospitality companies promote their products.

There are a few trends accelerated by the pandemic also. For example safety & hygiene. Several hospitality trends can be broadly described as being related to safety and hygiene. These have become especially important with the emergence of COVID, as the world adjusts to the virus and efforts to contain the spread. These concepts must be a priority for hotels, restaurants, bars, and cafes.

Measures here may include the provision of hand gel, increased cleaning of areas where customers will be, implementing policies related to wearing masks or other protective equipment, and ensuring social distancing rules are respected. Any special rules need to be made clear ahead of time and enforced to make people feel safe.

Moreover, hospitality marketing efforts also need to emphasize the safety and hygiene steps you are taking. Explaining these steps could be the difference between generating bookings and having customers look elsewhere. Another one is contactless payments. Many of the biggest hospitality trends are concerned with reducing friction, and contactless payments have been one of the biggest examples. Customers save time sorting through cash or entering their PIN when accepting contactless payments. The emergence of things like Apple Pay and Google Pay also removes the need even to carry a wallet.

besides removing friction and improving the customer experience, the coronavirus pandemic has also increased the demand for contactless payments. Many customers and staff members feel uncomfortable handling cash, and providing the option for contactless payments may be seen by many as a necessity rather than a luxury.

Editor: What tech would you like to see in operations? What operational problems need tech solutions?

Mobile Check-In. Mobile check-in hospitality tech is a very important area to consider because it can help to improve the customer experience at the point of their initial arrival. This is especially beneficial because first impressions can greatly affect how customers ultimately feel about their visit or stay. Crucially, mobile check-ins serve the need for face-to-face customer interactions, meaning customers can potentially have greater flexibility regarding when they check-in. This ties in with wider contactless technology trends within the hospitality industry, and can be especially welcome for those nervous about COVID-like diseases. Another one is Recognition technology. Recognition Technology is one of the most important emerging tech trends, but its potential uses in the hospitality industry are especially interesting. In particular, biometrics is used to usher in a new age of seamless authentications, which could benefit hotel processes and customer purchases.

For example, imagine if a fingerprint or facial recognition technology could be used in your hotel to unlock rooms. Now, consider the uses of the same technology for check-in and check-out purposes. In the future, this technology is also likely to allow for completely seamless purchases, with payments being authenticated by touch.

Editor: What is the one tech/app/software feature you would like to see?  This could be for guests, operations, etc.

People sometimes confuse 360 videos with virtual reality. While they use similar technology and are often combined, there are some key differences.

Virtuality reality is a computer-generated simulation of a 3D environment that people can interact with via a headset or other equipment. It helps potential guests feel what it’s like at your property and in your rooms in the first person. Think of it as a video game. 

360 video is meant to be watched on your computer, phone, or tablet. It helps show potential guests what it’s actually like at your property. Think of it as a movie.  

The opportunity to promote your property with VR hotel tours is only growing. And properties with a virtual tour included are clicked, on average, 10 times more than those without one.

 If you already know that the visuals on your website can have a huge impact on sales, then you can imagine what impact a VR tour can have. One can try stitching together popular user-generated visuals to help bring your tour to life. 

I like this particular feature because it gives a realistic preview of rooms and event spaces, puts the viewer in the driver's seat, and attracts both individual guests as well as large events looking for hosting.

Would like to build up a standard mechanism for retaining quality staff and provide an individual with a good job culture and work environment as per this social or digital revolution.
